Time to get on it and brew a new. Need to take advantage of the cooler weather for better fermenting temperatures. Will try an IPA.

Late Summer - Early Fall '08 -

Planning on creating & brewing a couple more recipes to have a variety in time for Christmas. There will be a Hoppy Hollidays III and in honor of our European trip - a Happy Holland Days, which will actually be a Belgium style double or triple Abbey Ale.

July '08 -

In order to fine tune my brewing & to have a clean & thirst quenching beer, went to a simpified Pale recipe - PALE PALS. Focus on Simcoe & Cascade Hops. I love these because of their citrusy aroma & flavor. Also, using my new carboy covers that my wife made me for Christams. These fit snug of the glass fermenting carboys in order to keep out light and wick water from a washtub that the fermenters sit in. Seem to be working well so far.

Winter - Spring '07 -

Hoppy Hollidays - This is my first original recipe to brew and to my happiness, has been my best brew to date. A citrusy Pale. I tried to take the hoppy elements of a bitter IPA and mix them with a creamier, darker quality. Took inspiration from Sierra Nevada's Celebration Ale, Dogfishead 60 min. IPA, and my own imagination for something a little different. I will add recipe and process soon.
